Thai FishCakes :- It is the most flavored food of Thailand. These cakes are mainly eaten with or without rice and accompany with Thai sweet chilli sauce, chopped cocumber, fresh coriander and a squeeze of lime juice. It required only one hour for cooking. The ingredients needed to cook Thai fishcakes is 454 gm white-fleshed fish fillets, 6 kaffir lime leaves, snipped into thin strips, 3 Tbsp. coconut milk, 2 Tbsp. fish sauce1, /2 tsp. shrimp paste, 1/2 Tbsp. chili powder, 1/3 tsp. ground cumin, 1/4 tsp. ground coriander, 1/2 tsp. brown sugar, 3 green onions, sliced1 thumb-size piece galangal, ginger, 3 cloves garlic, 1 red chili, 1/2 tsp. dried crushed chili, 1/2 cucumber oil for high temp. frying and for serving you need Thai sweet chili sauce, lime wedges and fresh coriander.
For preparation first of all make the small pieces of fish. In a cup add coconut milk, fish sauce, shrimp paste, chili powder, cumin, ground coriander, and brown sugar. Mix well and pour over the fish. Now add remaining ingredients to make a thick paste. now pat this paste on fish cakes. And put these cakes about 10-15 min. in freezer. On the other hand heat the oil in the frying pan till it start sizzle when splashed with water. Now put cakes in the oil and fried until its color changes into golden brown. Garnish cakes with sliced cocumber, Thai chilli sauce, fresh coriander and with lime juice. Served with rice.
